1.Stuffed Bell Peppers

Ingredients:

  • Bell peppers of various colors
  • Quinoa or brown rice
  • Black beans
  • Tomatoes
  • Onion
  • Garlic
  • Fresh cilantro
  • Spices (cumin,paprika,salt,pepper)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Cook the quinoa or brown rice according to package instructions.
  4. Sauté the onion,garlic,and peppers in a pan until softened.
  5. In a large bowl,combine the cooked rice,black beans,sautéed vegetables,and spices.
