Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 2 cups Italian-style bread crumbs
  • Salt and pepper, to taste
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley (for garnish)
  • Vegetable oil, for frying (or olive oil for baking)

Instructions

  1. Preheat your oven to 425°F (220°C). If you're baking, line a baking sheet with parchment paper and preheat for 10 minutes.
  2. Prepare three shallow dishes. Place the flour in the first dish, the beaten eggs in the second, and the bread crumbs mixed with salt and pepper in the third.
  3. Dredge each chicken breast in the flour, shaking off the excess. Then dip it into the egg, ensuring it's fully coated, and finally press it into the bread crumbs, ensuring an even layer on both sides.
  4. If frying, heat about 1/2-inch of vegetable oil in a deep skillet over medium heat. Fry the chicken breasts for about 4-5 minutes on each side, or until golden brown and crispy. Drain on paper towels.
  5. If baking, lightly brush the chicken breasts with olive oil and place them on the prepared baking sheet. Bake for 20-25 minutes, or until cooked through and golden brown.
  6. Spread a layer of marinara sauce on the bottom of a 9x13-inch baking dish.
  7. Arrange the fried or baked chicken breasts on top of the sauce.
  8. Top each chicken breast with a generous sprinkle of mozzarella cheese and a sprinkle of Parmesan cheese.
  9. Bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and garnish with chopped fresh parsley. Serve immediately with more marinara sauce on the side, if desired.
