1.Smoky Mushroom Tacos
- 1 lb cremini mushrooms,sliced
- 2 tbsp vegetable oil
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper,to taste
- 1/4 cup vegetable broth
- 1/4 cup fresh lime juice
- 1/4 cup chopped cilantro
- Taco shells or tortillas
- Avocado,sliced (optional)
- Lettuce,shredded (optional)
- Tomatoes,diced (optional)
- In a large skillet,heat the vegetable oil over medium heat.
- Add mushrooms and cook until they start to brown,about 5 minutes.
- Stir in the smoked paprika,cumin,garlic powder,onion powder,salt,and pepper.
- Cook for another 2 minutes,stirring occasionally.
- Add the vegetable broth and lime juice,and cook until the liquid has reduced by half.
- Remove from heat and stir in the chopped cilantro.
- Warm your taco shells or tortillas according to package instructions.
- Fill each taco with the mushroom mixture and top with avocado,lettuce,and tomatoes if desired.
