1. Smoky Mushroom Tacos
- 1 lb cremini mushrooms, sliced
- 2 tbsp vegetable oil
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 1/4 cup vegetable broth
- 1/4 cup fresh lime juice
- 1/4 cup chopped cilantro
- Taco shells or tortillas
- Avocado, sliced (optional)
- Lettuce, shredded (optional)
- Tomatoes, diced (optional)
- In a large skillet, heat the vegetable oil over medium heat.
- Add mushrooms and cook until they start to brown, about 5 minutes.
- Stir in the smoked paprika, cumin, garlic powder, onion powder, salt, and pepper.
- Cook for another 2 minutes, stirring occasionally.
- Add the vegetable broth and lime juice, and cook until the liquid has reduced by half.
- Remove from heat and stir in the chopped cilantro.
- Warm your taco shells or tortillas according to package instructions.
- Fill each taco with the mushroom mixture and top with avocado, lettuce, and tomatoes if desired.
